August 10, 1954 Coconut Taffy Bars

Coconut Taffy Bars
from: Mrs. Jas. Wright, LeRoy, N. Y.

1 c. soft shortening (half butter)
2 c. brown sugar
2 eggs
1 t. baking soda
1/4 c. hot water
1 t. vanilla
4 c. sifted flour
1 1/2 t. B. Powder
1/4 t. salt
1 c. moist shredded coconut

Mix together thoroughly shortening, sugar and eggs. Sift in baking soda dissolved in hot water, add vanilla. Sift together flour, baking powder and salt, add to first mixture. Mix in coconut (cut up in long shreds). Chill dough 2 hr. Roll into balls the size of walnuts. Place 2" apart on UNGREASED cookie sheet. With fingers, flatten each ball into a 1 1/2" x 2 1/2" oblong 1/4" thick. Press each cookie lengthwise with tines of fork in washboard effect. Bake 400 degrees 8 to 10 minutes. Makes 5 dozen.
