Baking Powder Biscuits
2 c. flour
4 t. baking powder
1 t. salt
4 T. shortening
3/4 c. milk
Sift flour, baking powder and salt. Cut in shortening use pastry blender until mixture has the appearance of fine meal. Leave some of the pieces of shortening the size of small peas. Add milk, stirring only enough to combine ingredients. Turn out onto floured pastry cloth, knead for about 1 minute. Roll out 1/2 inch thick. Cut with biscuit cutter. Bake 450 degrees 12 to14 minutes. Makes 12 large, 18 small biscuits.
Orange Biscuits
Follow biscuit recipe. After biscuits have been cut, press a small cube of sugar which has been dipped in orange juice into top of each biscuit.
Cheese Biscuits
Follow biscuit recipe, add 1/2 c. grated dry sharp cheese to flour and shortening mixture. Wonderful way to use up odds and ends of cheese.
Home Made Biscuit Mix
8 c. flour
1/4 c. baking powder
4 t. salt
2/3 c. dry milk
1 1/2 c. shortening
Sift dry ingredients. Cut in shortening until mixture resembles fine meal.Store in covered container. It is not necessary to refrigerate unless you use lard as shortening.
To use biscuit mix:
1 c. mix
1/4 c. water
Stir until blended. Proceed as for regular biscuits.
To make drop biscuits: Use regular biscuit recipe but use 1 c. milk instead of 3/4 c.
To make shortcake or richer biscuits: Follow regular biscuit recipe, use 1/2 c. shortening instead of 4 T. and 2/3 c. milk instead of 3/4 c. Add 1 T. sugar to sifted dry ingredients.
Quick Cinnamon Rolls: Follow recipe for shortcake biscuits. Roll dough 1/4 inch thick into a rectangle about 7 x 16 inches. Spread with 1/4 c. softened butter. Mix 1/2 c. brown sugar with 1 t. cinnamon. Spread over buttered dough. Roll up as for jelly roll, starting at the wide side. Cit into 1 inch slices, place cut side down on greased baking sheet. Bake 425 degrees about 14 minutes. Serve hot.
