November 2, 1954 "Blue Heaven" Hamburger, Apple Fritters

"Blue Heaven" Hamburger

2 pounds ground beef
2 T. onion finely chopped
1 1/2 t. salt
1/4 t. pepper

1/4 pound bleu cheese
1 T. Worcestershire sauce
1/4 t. dry mustard
Dash of Tabasco sauce

Combine beef, onion and seasonings. Divide meat into 12 even patties, making them quite thin. Crumble bleu cheese, add remaining ingredients. Put a tablespoon of the cheese mixture in center of 6 patties, top with remaining 6 patties, pinch edges together firmly. Broil 8 to 12 minutes depending on upon how you like them. Serve on toasted buns. Serves 6.



Apple Fritters

2 c. lour
1 t. soda
 2 T. sugar
1/2 t. salt
2 eggs, beaten
1 1/4 c. sour milk
2 T. melted butter
3 medium-sized tart apples, chopped

Sift flour, sugar and salt. Add sour milk, beaten eggs and melted butter. Fold in chopped apples. Drop by spoonfuls into hot fat (375 degrees). Turn, browning on both sides like doughnuts. Drain on absorbent paper. Serve with plenty of real maple syrup or sprinkle with confectioners sugar. Yield: 2 dozen.
