October 17, 1955 Beef Stew with Pinwheel Biscuits, French Apple Cake, Banana Nut Bread

Beef Stew with Pinwheel Biscuits

1 1/2 pounds boneless beef for stew
2 T. shortening
1 t. salt
1/8 t. pepper
Water to cover
4 potatoes, medium
4 carrots, cut in half
4 onions, small
1 12-oz. pkg. frozen peas
1/4 c. flour

Brown meat in shortening. Season. Add water, cover, cook slowly for 1 hour. Add potatoes, carrots and onions and cook 30 minutes. Add peas and cook 30 minutes longer or until meat is tender and vegetables are done. Remove meat and vegetables to serving dish. Add water to cooking liquid to make 2 cups. Thicken liquid with flour for gravy. Pour gravy over meat and vegetables. 4 servings.

Note: Pinwheel biscuits may be baked on top of stew, by returning stew, after thickening liquid to oven proof casserole and arranging biscuits on top. I prefer to bake biscuits separately and place them on top of stew after baking. They are crisper this way.


Pinwheel Biscuits

2 c. flour
1 T. flour
3/4 t. salt
6 T. shortening
1/3 c. to 1/2 c. milk
1/2 c. ketchup

Sift together flour, baking powder and salt. Cut in shortening until mixture has fine even crumb. Add enough milk to make a soft dough. Turn out on lightly floured surface and knead for 1/2 minute. Roll down 1/4 inch thick and spread with ketchup. Roll as jelly roll, slice 3/4 inch thick. Bake at 450 degrees for 12 to 15 minutes.

Note: You may use 2 c. of Basic Biscuit Mix if you prefer.


French Apple Cake

2 c. sliced tart apples
2/3 c. sugar
1/2 t. cinnamon
1 T. flour
3 T. butter
1 c. flour
1/2 c. sugar
1 t. baking powder
1/4 t. salt
2 egg yolks
1 T. melted butter
1/4 c. milk

Grease a deep 8" pie plate. Cover bottom well with sliced apples. Combine sugar, cinnamon and flour, sprinkle over apples; dot with butter. Prepare batter by sifting flour, sugar, baking powder and salt, add to flour mixture, stir until blended. Pour over apples. Bake at 425 degrees for 30 minutes. Reverse cake on oven proof platter, cool slightly. Use 2 egg whites for a meringue, Cover cake with meringue, bake in slow oven for 15 minutes at 300 degrees.

Meringue:

2 egg whites
2 t. water
1/8 t. salt
4 t. sugar

Combine egg whites, water and salt. Beat until egg whites are still but not dry, gradually add sugar a little bit at a time until all is added.


Banana Nut Bread

"Especially nice for lunches, slices better day after it is made." Freezes well.

1/3 c. shortening
2/3 c. sugar
2 eggs
1 3/4 c. flour
2 t. baking powder
1/4 t. soda
1/4 t. salt
1 c. mashed bananas
1/2 c. walnuts, chopped
1 t. vanilla

Cream shortening and sugar; add eggs, beat well after each addition. Sift together dry ingredients; add alternately with bananas to sugar mixture; beat smooth. Stir in nuts and vanilla. Bake in greased and floured 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan in slow oven (325 degrees) 60 to 70 minutes or until done. Cool 10 minutes in pan; remove and cool thoroughly.

Note: Bananas are only liquid in this recipe.
