September 20, 1954 Smothered Hamburger Patties, Apple Salad, Uncooked Dressing for Fruit Salads, No Bake Cheese Cake

Smothered Hamburger Patties

1 c. bread crumbs
1/2 c. milk
1 pound ground beef
1 onion, chopped
1 egg
1/8 t. pepper
1 t. salt
10 1/2 oz. can veg. soup
1/3 c. water

Soak bread crumbs in milk. Mix all other ingredients except veg. soup, 1/4 t. salt and milk. Form meat into patties and brown in small amount of fat. Combine veg. soup, salt and water, pour over patties, cover and simmer 20 minutes. Makes 4.


Apple Salad

6 red apples
2 bananas
1/2 c. chopped celery
1/2 c. raisins
1/4 c. coconut
1/2 c. peanuts
1/2 c. watnuts
Juice of 1/2 lemon

Dice apples, do not pare them. Add remaining ingredients. Serve with the following dressing:


Uncooked Dressing for Fruit Salads

1/4 c. peanut butter
1/4 c. cream
2 T. sugar
1/2 c. mayonnaise

Combine all ingredients, mixing until smooth.


No Bake Cheese Cake

Crumb topping:

2 T. melted butter
1 T. sugar
1/4 t. cinnamon
1/4 t. nutmeg
1/4 c. chocolate cookie crumbs
1/4 c. graham cracker crumbs

Mix butter, sugar and spices together. Add half of spiced mixture to chocolate crumbs and remaining half to graham cracker crumbs, mix well. Turn cheese cake mixture into 8 inch spring form pan; sprinkle with crumbs in wedge shaped pattern, alternating chocolate and graham cracker crumbs. If desired an 8 or 9 inch square pan or a 9 x 5 loaf pan may be used. Line pan with waxed paper. Press crumb mixture in bottom of pan; turn in cheese cake mixture.


Cheese Cake Filling:

2 T. unflavored gelatin
1 c. sugar, divided
1/4 t. salt
2 eggs, separated
1 c. milk
1 t. grated lemon rind
3 c. (24 oz.) creamed cottage cheese, sieved
1 T. lemon juice
1 t. vanilla
1 c. heavy cream, whipped

Mix gelatin, 3/4 c. sugar and salt in top of double boiler. Beat together egg yolks and milk; add to gelatin mixture. Cook over boiling water, stirring constantly until gelatin dissolves and mixture thickens, about 10 minutes. Remove from heat; add lemon rind, cool. Stir in sieved cottage cheese, lemon juice and vanilla. Chill, stirring occasionally, until mixture mounds slightly when dropped from a spoon. Beat egg whites until stiff, but not dry. Fold into gelatin-cheese mixture with whipped cream. Turn into prepared pan; chill until firm. Makes 10 to 12 servings. For family size 5 to 6 servings use half filling recipe but full amount of crumb mixture in an 8 inch round pan or 9 inch pie plate.
