September 24, 1954 Baked Tuna Loaf, Scalloped Corn, Apple Brown Betty

Baked Tuna Loaf

2 c. flaked tuna
3 c. bread crumbs
1 egg
1 T. minced parsley
1 t. salt
1/2 c. celery, chopped
1 small onion, chopped
10 1/2 pz. can chicken soup
1/4 t. pepper

Mix all ingredients except the soup. Shape in a loaf, place in greased baking pan. Pour soup over top, bake at 375 degrees for 30 minutes.


Scalloped Corn

2 c. cooked or canned corn
1 c. milk
2/3 c. cracker or bread crumbs
3 T. melted butter
1/2 t. salt
1/8 t. pepper
1 T. sugar
2 eggs
1 t. minced onion

Beat eggs, add milk and crumbs. Add corn, onion, seasonings and melted butter. Mix together well, pour into greased casserole. Bake at 350 degrees for 40 minutes. Serves 6.


Apple Brown Betty

3 c. tart apples, diced
1 1/2 c. soft bread crumbs
2/3 c. brown sugar
1/4 c. melted butter
1/4 t. salt
1 t. cinnamon
2 T. lemon juice
1/3 c. water

Add melted butter to bread crumbs. Combine apples, sugar, salt and cinnamon. Place a layer of buttered crumbs in bottom of a greased casserole. Add a layer of diced apples and another layer of crumbs. Continue with alternate layers, having bread crumbs on top. Combine lemon juice and water and pour over mixture. Bake at 350 degrees for 1 hour. Makes 6 servings.
